Chocolate Oat ((Cookie Butter)) No-Bake Cookies.

I didn’t think it could be done. But this classic cookie just got an upgrade & WOW!! This may come as a surprise to you, so hold on to your hat…this reno is a winner. I only modified one ingredient…this cookie was already perfect, no need for a complete overhaul!

I have enjoyed this cookie for as far back as my memories can stretch. Seems like someone always brings them to a church potluck. Bless you church ladies! Your confections are at the top of my ‘yum list’! I have to admit, I feel giddy, when with the first bite I realize – the cookie is ‘plain’. You know what I am talking about, right?

I suppose there are two no-bake cookie camps, Camp Peanut Butter & Camp Original. I am an original kind of girl.  Or should I say, was an original kind of girl…

This cookie butter has changed everything! I am in love. Have you tasted it yet?? It comes in crunchy & original (just like peanut butter – isn’t that cute?!). It may look like peanut butter and it may act like peanut butter, but it sure does not taste like peanut butter.

It tastes exactly like a sweet, crisp, buttery shortbread type of cookie — in a spreadable form. The first time I tasted it, my mind went into warp speed as I began imagining all of the yummy ways this cookie butter could become part of my daily life.

I have quit a list of tests to conduct with this 6th wonder of the culinary world. First on the list: No-Bake Cookies. ((I bet you are wondering what culinary wonders 1-5 are…))

I When I was at SMU, I had figured out how to make a small batch of these cookies. I used an individual packet of instant oatmeal, a pat of butter, a splash of milk and one heap of cocoa. For a few minutes, I was back home! I love that food is so tightly bound to our memories. One taste of a special recipe & home doesn’t feel so very far away.

Here is where the magic happens! I chose the crunchy style of cookie butter this time – and every once in a while, while munching on these yummy treats ((I munched multiple times…oops)) I found a crunchy bit of cookie butter goodness The more bits of crunch I found, the I wanted to find, it may become a problem.

 Well, I like to share – so my problems can become your problems! You are welcome in advance.

I used a 2 T scoop to create the perfect, 2-bite sized cookie. One thing my cookie is missing is that beautiful glossy  outer shell. Take note the instructions for this cookie emphasize the importance of allowing the chocolate mixture to boil for no longer than ONE minute. My little helper slowed my down at a critical phase on the cookie production process. I think my chocolate mixture boiled for 30 seconds too long. Because of this they have a slightly sandy texture. They are still so perfectly delicious!

Ingredients
  1. 1/2 c milk
  2. 1 stick butter (I used salted)
  3. 1 1/2 c sugar
  4. 3 T cocoa powder
  5. 1/4 t kosher salt
  6. 1-2 t vanilla
  7. 1/2 c Biscoff cookie butter (I used the crunchy variety)
  8. 3 c quick cooking oats
Instructions
  1. In a medium saucepan, over medium high heat, combine first 4 ingredients. Stir, allowing mixture to reach a boil. Let the sugar, cocoa mixture boil for exactly one minute ((no longer)).
  2. Remove the chocolate sauce from the heat & add remanning ingredients. Stir to combine.
  3. Using a 2 T scoop, drop cookies onto a parchment lined baking sheet. Leave rounded to lightly press to flatten.
  4. If you don't over boil and can refrain from messing with them for 2 hours, the cookies will develop a glossy sheen, which I find gorgeous!
  5. Makes 36
