Fast and Easy Cheesy Enchilada Stove-Top Pasta

Seems like “busy” and “dinnertime” have become best friends lately. We are rushed from appointments to lessons to practice to complete assignments and tweak projects. Spicy Bean & Rainbow Veggie ((No-Peek)) Veggie Stew

A pound of dried beans, a colorful medley of fresh veggies and a few pantry staples are often my ticket to a simple, tasty dinnertime solution. While away on our recent vacation, NO-PEEK bean stew made it’s way to our dinner table several times. In order to bring a little variety to my favorite no-peek method ((see more ideas HERE)), I switched up the veggies, spices and cooking liquid.

Top Hikes & Eats On ((or near)) Orcas

After 3 trips to the San Juan Islands over the last 4 years ((read about are trip 2 years ago HERE)), I definitely feel as though that place is a second home. The first time we went, Gracie was only 2 – so our experiences were limited. The second time we went, Shep and I never left the house until he was medi-flighted off of the island. So this time, we ventured out! We took new hikes, went to other parts of the island, tried a few restaurants and a bakery and even took the inter-island ferry to Friday Harbor three times.

With all the sights and tasty food we enjoyed this year, I decided to share some of my favorites. ((BUT, I really like the slower pace and small population of Orcas — so don’t visit. Just kidding, kind of.)) Continue reading

Simple Crispy Pesto Chicken & Potatoes

Summer – whew. It’s a break for sure, but BOY are we busy! We enjoyed a nice trip to the lake last week and then squeezed in a double portion of busy when we got home. Doctor’s appointments, a slew of summer cooking classes ((check out my upcoming classes HERE and HERE)) and a set of freshly applied braces were just a few of the activities that had us moving at a speedy pace this week. An Okie Girl’s Take on Chicken Marsala

I am torn between 2 names for this recipe, the one listed above and “Busy Momma’s Chicken Marsala”. This recipe really is a blend of both. You see, this Okie girl has received no formal cooking training. Most of my recipes are a mix of what I have on hand and what I think food should taste like. So when I have “an Okie girl’s take” in the title you can be sure I know the food professionals would probably spank me for daring to attempt such refined, classic, international dishes. BBQ Chicken & Blue Cheese Sfincione

One of my menu favorites – Sfincione!  Sfincione is  Sicilian pizza and sounds a lot more complicated than it really is. It all starts with pizza dough. I prefer homemade pizza dough and have an awesome recipe HERE. I learned how to make pizza dough during my last trip to Napa and have been turning them out ever since.
