CopyCat Old-School Iguana Lounge Salsa

In the year BB ((before babies)), I worked for an engineering firm in OKC, on the edge of Nichols Hills and had money to burn. Well, I NEVER had money to burn – but I could afford the occasional $4.99 lunch special at a string of nearby restaurants. Brown Bag’s Chicken Salad Sandwich & Pearl’s, Red Beans & Rice were among my most favorite lunches. I have shared my “copycat” version of those recipes HERE & HERE. But the one restaurant I have yet to discuss is Iguana Lounge. Continue reading

Huevos Rancheros Verdes Breakfast Cups ((Breakfast will never be the same!!))

I have a bundle of recipes just floating around in the spaces between my to do lists, daydreams and whatever decides to bounce around in my brain throughout my days. And this recipe is one that has been begging to come to be for months. Please tell me I am not the only one this happens to! Continue reading

Heirloom Tomato Salsa ((straight from the garden!!))

You guys may have learned this by now, but let me just say it again for the record! Chips & salsa are my love language. It used to be Chips & salsa AND Diet Dr. Peppers from Sonic, but I gave up the DDP addiction 10 months ago ((and it was SO hard to do — I am NEVER going back!!)). Anyway, about the chips and salsa… Continue reading

Spicy Salsa ((really spicy))

I LOVE chips and salsa! It is one of my top 3 favorite foods ((next to almond cake with warm buttercream icing and fried chicken with homemade ranch))! I also love making my own salsa. It is so easy and so obviously superior to store bought. If you haven’t already seen them, you should take a second and check out my 2 salsa recipes already shared on Food for a Year. Continue reading

Homemade Oven-Roasted Restaurant Style Salsa ((This is as GOOD as it gets!))

This could totally be one of “those” recipes. You know, one of the recipes that is kept secret — locked up and never shared in it’s entirety?? Good for you – I am bad at keeping a good thing secret! In addition to being the most perfect salsa tasting salsa, it is just so very easy to make. You must try this at home! Continue reading

7-Minute DIY Salsa

One of my favorite things to make in the kitchen is homemade restaurant style salsa. It is so quick, ultra simple and crazy good. Just a few ingredients & a whirl in the blender stand between you and one of the best things about Mexican food! No more under seasoned, overly spicy, too chunky, salt overloaded, gaggy garlic or onion extreme. When you DIY it, you make it just the way YOU like it. Continue reading
