This recipe solves a problem I have been dealing with for years! I am so relieved to have a ((yummy)) solution to this struggle, but based on how very easy the solution is — I can’t believe it took me this long to figure it out.
Summer – whew. It’s a break for sure, but BOY are we busy! We enjoyed a nice trip to the lake last week and then squeezed in a double portion of busy when we got home. If all sides were judged solely for appearance, this one would be the all around winner. I mean really, can there BE a prettier side dish ((said in the best Chandler Bing voice ever)). The color of the herb seasoned butternut squash, coated in a light brown sugar crust & adorned with beautiful crispy bright red bits of sweet and salty candied applewood smoked bacon – this dish SCREAMS “Serve me at your Thanksgiving AND Christmas Feasts!! Well, mom told me it came from Laura’s mom – but since Laura’s mom is a mom and the cranberry salad is so very simple, I will still call it “Mom’s Simple Cranberry Salad”. But what you really need to know, besides it’s simplicity and mom origins, is that is tastes REALLY good! And — I bet at least one ingredient will surprise you!
Why haven’t I done this before?? The flavors are AMAZING (deep and perfect) and it is a meal for the ages! So simple and I am in love with using one pot for the entire meal. The day I made this, I had just less than two hours at home in the middle of the day. Continue reading
