Cheesy Bacon Meatball Potato Casserole ((a real crowd pleaser))

There comes a point when it is time for a change — right?? Well, I needed something different for dinner. I did a quick scan of my freezer, fridge and pantry and this is what I created: “Meatball Casserole”.

I normally go down the Italian road ((oh, how I literally went down the Italian road!!)) when using frozen meatballs – but with this recipe, I chose pure-dee comfort.

These are my favorite brands, the meatballs are from Whole Foods and the hash browns  were last spotted at Crest.

Spread the frozen hash browns out in a buttered casserole ((evenly)).

Top with the frozen meatballs.

Then assemble the cream cheese cheesy sauce. Start by heating the chicken broth, cream cheese and canned milk.

Whisk until combined and smooth.

Add shredded cheeses and stir to combine.

Pour the cheese sauce over the meatballs and potatoes.

Sprinkle chopped, cooked bacon, remaining cheeses and some fresh chopped chives.

Cover with foil and place in a preheated, 400° oven. Bake for 45 to 55 minutes until the center is bubbly and the cheeses are melted.

Remove foil and broil for 2 to 3 minutes.

Ingredients
  1. 1 bag frozen hash browns
  2. 1 bag frozen meatballs ((the brand I use has about 22 meatballs))
  3. 12 oz cream cheese ((one and a half blocks, light is fine))
  4. 1 10-1/2 oz can chicken broth
  5. 1 11 oz can evaporated milk ((skim is fine))
  6. 2 c hand shredded sharp cheddar ((reserve 1/2 c for topping))
  7. 2 c hand shredded Monterey jack ((reserve 1/2 c for topping))
  8. salt & pepper to taste
  9. 10 strips precooked bacon
  10. 2 T fresh chopped chives

  3. Pour the cheese sauce over the meatballs and potatoes. Sprinkle chopped, cooked bacon, remaining cheeses & fresh chopped chives.
