Cheesecake-filled Chocolate Chip Cookie Cake

I have been search­ing for a yum­my new bar cook­ie recipe and recent­ly came across this recipe on Pin­ter­est and knew I had found “the one”. I love the tra­di­tion­al brown sug­ar & but­ter rich choco­late chip cook­ie. But, I instant­ly became obsessed with the idea of stuff­ing clas­sic cheese­cake between two lay­ers of cook­ie per­fec­tion!? Real­ly, it wasn’t a mat­ter of “IF” I would actu­al­ly make this recipe — but “WHEN”.

Meet the bunnies!

After 7 weeks of lov­ing Lula & Bubba’s babies, they have final­ly grown up enough to be able to tell them apart. As I announced in an ear­li­er post, we fig­ured out a few weeks ago that we had three boys and one girl. Since we are now able to dis­tin­guish the black ones from each oth­er, I asked David to tell me which black one is a girl. Turkey & Cheese Melts ((It’s what’s for dinner))

Sounds sim­ple right? Turkey & Cheese melt­ed on some­thing. Oh but trust me, they are a plea­sure — both to eat & to make. Busy sum­mer nights are tricky for sit down fam­i­ly din­ners. If it isn’t because of game time at the ball field, or the fish­ing pond call­ing, then it’s the yard that needs to be de-jun­gled.

Spicy Salsa ((really spicy))

I LOVE chips and sal­sa! It is one of my top 3 favorite foods ((next to almond cake with warm but­ter­cream icing and fried chick­en with home­made ranch))! I also love mak­ing my own sal­sa. Chard and White Bean Italian Soup with Crispy Sausage

A few pounds of dried white beans is a pantry sta­ple must in my home. If I am out of pro­tein options, run­ning low on meal ideas, or just look­ing for some sim­ple ((healthy)) com­fort food, beans take care of busi­ness every sin­gle time. AND — hel­lo! They are super bud­get friend­ly too. A per­fect food for my fam­i­ly of 6.
