Frito Chili Pizza Pie

Homemade pizza has become one of my favorite family meals for many reasons. First ((and most importantly)) it tastes SO good. Second, I am just so very tickled that I have figured out at least ONE way to use yeast correctly; am I the only one who is scared of yeast?! Third, creating new flavors of dough & topping combinations is very liberating ((it’s also an EXCELLENT way to clean out the fridge…))! But most of all, I love how interested in cooking the kids become and the dinner table is certain to be packed with happy eaters. Continue reading

Salted Caramel Cheesecake

We recently celebrated Blondie’s 10th birthday & guess what that boy requested for his birthday cake?? ((Well, you probably don’t need to guess, since I gave it away in the title & featured photo…)) So, good job! You are right. He picked cheesecake. Originally, he had an elaborate idea of making me stack a cookie, birthday cake and layers of buttercream on top of a vanilla cheesecake and I quickly, and nicely, refused. Continue reading

Spicy Oven-Roasted Cauliflower

One of my favorite ways to make & eat veggies is to oven-roast them! If you have never tasted oven-roasted celery, green onions, green beans, carrots, mushrooms, squash, broccoli, cabbage AND especially cauliflower — you have really missed out on the yummiest way to meet your daily veggie quota. Oven-roasting brings out a blast of flavors including an amazing sweetness that’s mostly hidden in fresh, steamed & boiled preparations.
