Cheesy 3-Meat Breakfast Cups

This easy breakfast  should probably be considered part of the “Busy Mom” series because it is so easy, but I usually make something like this when I have a little more time in the morning.

I whip these up when I can tell the kids are tired of the “breakfast usuals” and we have no pressing morning appointments.

I am not sure I have ever made 2 breakfast cups alike because they always depend on what I have on hand!

Speaking of on hand – let me tell you what you need to keep on hand so that you can make these when you find a surprisingly slower morning:

  • canned crescent rolls or biscuits
  • pre-cooked bacon, sausage, ham etc
  • a few of your favorite cheeses (I prefer block cheeses)
  • jelly

Simply roll out the canned dough and cut into 12 equal ((approximately)) squares. If using biscuits I still roll them out a bit and cut them into squares and then toss a few squares into each cup along with the other ingredients.

Place one crescent square in the bottom of each muffin liner and top with a combo of pre-cooked meats.

Cube your favorite cheeses ((I used 3 oz. of sharp cheddar and 3 oz. Irish cheddar)).

Sprinkle the cubes over each cup & place into a preheated 375° oven.

Bake for approximately 14 minutes

and then serve with your favorite jelly. No leftovers with this one!

Ingredients
  1. 1 can crescent rolls or sheet
  2. 4 oz pre-cooked hams cubes
  3. 4 oz pre-cooked sausage cubes
  4. 8 pre-cooked bacon strips, chopped
  5. 3 oz sharp cheddar, cubed
  6. 3 oz Irish cheddar, cubed
  7. jelly for garnish
Instructions
  1. Preheat oven to 375°. Line a muffin tin with baking cups. Open canned crescent dough* and roll out slightly. Cut into 12 squares and place one square into each cup. Top with equal parts of meats and cheeses. Place in preheated oven and bake for 14 minutes, or until crescent is medium golden brown and the cheese is completely melted and bubbly.
  2. Remove and allow to cool for 2-3 minutes before serving. Top with your favorite jelly ((optional))
  3. Serves 6
Notes
  1. *Can substitute canned biscuit dough for the crescent dough. Simply roll out each biscuit a bit and quarter. Drop biscuit pieces into each cup and follow remaining instructions as listed above.
