Grapefruit + Sweet Onion Park Tacos

These tacos have a really unique, fresh, delicious flavor thanks to the addition of grapefruit — a little boost of sweet and sour.
This recipe takes advantage of the Dutch Oven and some low cooking temperatures to create and simple and flavorful summertime meal!
Here’s what you’ll need:
- 4 1/2 lb pork roast
- 2 grapefruits, zested + sectioned (pith and tough lining removed)
- 4-5 medium onions, quartered
- 2 bay leaves
- 2-3 Fresno chilis
- 1/2 red bell pepper sliced
- 2 celery stalks, dicedÂ
- 15-20 cherry tomatoes
- 6 oz Chardonnay
- 2 t sea salt
- 1 t black pepper
Combine all ingredients in a large, 7-9 quart dutch oven. Place covered dutch oven in a 350° oven for 3 hours. After 3 hours, remove from oven, ladle cooking juices over pork and return to oven. Reduce cooking temperature to 250° and cook for 3 more hours.
Once cooked through and tender, shred pork and toss in cooking juices to moisten.
Serve with tortillas and garnishes.
