Oven Roasted Okra

Today I am shar­ing a quick and sim­ple twist on tra­di­tion­al fried okra. My mom’s fried okra hap­pens to be one of my most favorite things to eat in the entire world. Salty, crunchy and fried to a crisp — coat­ed in a light cornmeal/flour coat­ing. I am not sure “it” can get any bet­ter — “it” may get as good, but it won’t get bet­ter! Spicy Oven-Roasted Cauliflower

One of my favorite ways to make & eat veg­gies is to oven-roast them! If you have nev­er tast­ed oven-roast­ed cel­ery, green onions, green beans, car­rots, mush­rooms, squash, broc­coli, cab­bage AND espe­cial­ly cau­li­flower — you have real­ly missed out on the yum­mi­est way to meet your dai­ly veg­gie quo­ta. Oven-roast­ing brings out a blast of fla­vors includ­ing an amaz­ing sweet­ness that’s most­ly hid­den in fresh, steamed & boiled prepa­ra­tions.

Oven Roasted Crispy Chicken & Rainbow Veggies with Gremolata & Bacon

Isn’t this a gor­geous meal?? You can’t help but feel good about your cook­ing skills when putting this into the oven. But before I tell you all about how won­der­ful this is and how I know YOU CAN DO THIS, don’t zone out into your thoughts of “I could nev­er do this!” or “what is a gremolata…sounds too fan­cy” or “I do good not to burn mac N’ cheese, so I am not even attempt­ing this!”. If you can chop ((with­out loos­ing a thumb)) then you can do this.
