I’ve been loving the grill so much and this simple Mojito Grilled Shrimp is the perfect recipe to celebrate the best of grilling season.

Okay, you maybe thinking :: “Good shrimp, check. Fresh herbs, check. But FOIL?”

Well, I don’t know about you but these last 12 months have been a little tense for me and for a food-lover like me, that can only mean one thing…a 12 pound souvenir from 2020.

To shed those truly UNWANTED pounds, I’m eliminating extra fat ((and sugar)) in all the places I’d normally be enjoying it. BTW much as I’d love this to be a sponsored post – IT IS NOT (but feel free to venmo me if you want lol).

See what I mean?! This foil makes the grilling process so perfect AND simple. After the shrimp has marinated, arrange it on a grill-proof foil lined baking sheet. Slide the foil (and shrimp off of the sheet pan and onto the grill in one swift and confident motion.

Cover with a grill dome in order to capture the heat and ensure the shrimp are evenly cooked.

The mint is a lovely flavor addition, and combined with the essential oils of the lime zest and garlic this shrimp is VERY satisfying. Just look what yumminess can be created without added fat!! BRAVO!

*A note about the shrimp : I preferred to marinate and grill with the shells on but for maximum marinade flavor, peel the shrimp before marinating and grilling.

Mojito Grilled Shrimp

  • 1 lb U15 shrimp
  • 1/4 c chopped parsley 
  • 3 T chopped fresh mint
  • 1 T chopped fresh chives
  • 3 cloves minced garlic 
  • zest of 2 limes
  • 1 t fine sea salt
  • 1/2 t ground black pepper 
  • 1/4 t crushed red pepper flakes 

Combine all ingredients and place in a medium sized bowl. Cover with plastic wrap and refrigerate 4-6 hours. 

Prepare/light grill according to your grill settings

Once marinating is done, place on a sheet of grill foil supported underneath by a sheet pan.

Slide the foil and shrimp onto the grill. Grill over hottest part of the grill for 10-12 minutes or until pink and cooked through. *Cover to retain heat and check occasionally for doneness.*

FOR ROASTING in the oven :: Preheat oven to 400°. Place shrimp on a sheet pan and bake, turning halfway through. Check for doneness after 8-9 minutes.

Once cooked through, remove peel and serve!
