Strawberry Rhubarb Cobbler – the perfect summer sweet!
I LOVE a good melty, cheesy grilled cheese sandwich. But, it honestly never fails. I burn at least 1 side of EVERY single grilled cheese sandwich I make. No matter how hard I try – the pan gets hotter faster than I expect and once I flip it over – BOOM! black as a piece of coal (and similar tasting too).
That’s why I think this sheet pan method is so.very.spectacular. Once you see how easy and *burn-proof* this method of grilled cheese making is, this will be your go-to sandwich-making method for sure.
Tater Tot Casserole – it’s my response to the 4,000th time I’ve been asked ‘what’s for dinner?’ And really, it’s an awesome meal solution. Tater Tot Casserole is easy to make, the ingredients are simple, and upon hearing the words ‘tater tots’, my kids are over the moon.

But I sure have had a renewed desire to practice comfort food and provide comfort food. ((me along with the entire nation, I think!))

This Scrub Island dip is pretty much everything. I think it would even be on the menu of my last meal — really. It’s creamy and a little salty, a pop of herby onion – and thanks to a really, really good quality blue cheese – the perfect pop of nutty, sweet, pungent blue cheese.
