My 6-month silent streak on the blog deserves to be broken with this Apple Oat Cake recipe. This easy, one-bowl recipe is something I’ve been dreaming about writing for a few weeks.

Welcome Back with Apple Cake

I’ve started typing this sentence and deleted it 12 times. How can I just crash back into the blog after ignoring it for so long? 4 seasons have passed in silence since the last words shared. Life became chaotic. Our home went up on the market and showings and keeping a clean house paralyzed me in the kitchen. When the house finally sold – the kitchen went into boxes and in storage for 5 months while we waited for the new house to be completed.

All along the way, I could’ve created in my temporary kitchen – I could’ve shared. But I lost a little bit of my voice. I’ve just felt like an elephant is sitting on my chest. So much of my future (paying) work gets populated by my consistency on this personal platform. And that pressure isn’t the best ingredient for creative writing and creative recipe creation. I’m not sure I’m totally back, although in my heart I so want to be. So what’s my plan? I’m giving myself the room to come back without the pressure to have to be here.

Either way – let’s talk about cake.

Apples and Spices

2 cups of diced pink lady apples and a blend of cinnamon, ginger and nutmeg add just the right amount of Fall flavor to this recipe. Pink Lady apples are a perfect baking apple; tart and firm, they hold up well to heat and keep their shape when baked.

One-Bowl Cake

Although I have spread the ingredients over 3 bowls, if I were making this without the need to photograph – everything would go in one LARGE bowl all at once. (For comparison, this cake is akin to banana bread in both ease and texture).

Apple Cake that Breaks the Silence

Whether it’s the first words in months or the first words in a newly minted friendship, this cake is ready for that responsibility. Moist and flavorful with just the proper balance of spice to apple to cake ratio. And let’s not kid ourselves – as good as the cake is – it’s really all about the icing. One-Bowl Apple Oat Cake with Salted Caramel Icing

Ingredients

  • 1 3/4 cups all purpose flour
  • 3/4 cup ground quick oats (or oat flour)
  • 2 1/2 teaspoons baking powder
  • 2 teaspoons kosher salt
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1 1/2 cups cane sugar
  • 1/2 cup brown sugar, packed
  • 2 cups diced Pink Lady Apples
  • 3 eggs
  • 1 cup vegetable oil
  • 1/2 cup water
  • 1 cup Greek yogurt

Directions

  1. Preheat the oven to 350°. Spray a bundt cake pan with non-stick cooking spray.
  2. In a large bowl combine all ingredients.
  3. Pour cake batter into the prepared cake pan and bake until the cake is done, approximately 50-55 minutes. Test for doneness by using an instant read thermometer or inserting a toothpick. (Internal temperature of 205°.)
  4. Once the cake is done, remove from the oven and allow to cool for 15 minutes before releasing from the pan onto a serving platter.
  5. Cool completely and top with Salted Caramel Icing

Salted Caramel Icing

Ingredients

  • 4-5 ounces premade salted caramel sauce (or caramel topping), warmed
  • 4-5 ounces heavy whipping cream
  • 1 teaspoon vanilla bean paste
  • 3 cups powdered sugar, sifted
  • water incrementally to reach desired consistency

Directions

  1. In a medium bowl, combine first 4 ingredients, adding water in tablespoon increments to reach desired consistency.
  2. Pour over cooled cake
