Grilled Cedar Plank Steelhead Trout

Simple Steps + Delicious Flavors
The flavors of this grilled steelhead trout are fresh and complex, thanks to the lemons, shallots, fennel and the cedar plank.
Grilled Cedar Plank Steelhead Trout
- 2 lbs steelhead trout fillets, deboned and cut into 2 equal portions
- 1 lemon, sliced 1/4″ thick
- 1 shallot, thinly sliced
- 4 sprigs of fresh fennel
- sea salt
- cracked black pepper
- 2 cedar grilling planks, submerged and soaked for at least 2 hours
Place one fillet on each cedar plank.
Top with lemons, shallots and fennel frond. Sprinkle with salt and pepper.
Grill steelhead trout over indirect heat, covered with a grill dome for 8-10 minutes.
Rotate 180° halfway through grilling time.
Check for doneness and remove from flame if cooked to your preference.
