If you have been paying attention a little, I’m currently on a salmon dinner kick. And really — why not salmon?! It’s so easy to prepare, very versatile and ALWAYS delicious. This salmon bowl recipe came together in under 25 minutes, used only one pan and made use of my summer garden shishito peppers, a couple of over-ripe plums and a neglected apple.
Even after all these years of getting family dinners on the table for my herd of 6, Sheet Pan Salmon is still consistently everyone’s favorite meal. Never any complaints, never any huffy moans and never any pseudo-polite “can I have something else” –es.
