Green Fluff is considered a salad (at least at my mom’s dinner table) that actually contains no lettuce, or ANY vegetable for that matter. That probably explains why I loved it so much when I was a kid – and that my kid’s love it equally today!

This is one of those ONE BOWL recipes – that always turns out. Just add every ingredient into the bowl, fold in the Cool Whip and chill until it’s time to serve.

Two things make this recipe extremely appealing – it’s ease and it’s flavor. — Actually make that three :: every.single.time that first bite brings me right back to my 10 year old self standing in my mom’s kitchen.

The mild pistachio + pineapple flavor and the sweetened Cool Whip with those fluffed marshmallows?? Truly delightful.

Green Fluff Salad

  • 1 (3.4 oz) box Instant Pistachio Pudding mix
  • 1/2 c chopped pecans, (raw unsalted)
  • 1 (15 oz) can crushed pineapple, undrained (if you can find the pineapple packed in syrup it’s preferred)
  • 1 (8 oz) Cool Whip container, thawed
  • 2-3 c mini-sized marshmallows

In a large mixing bowl, combine pudding, pecans and pineapple. Stir vigorously to completely combine.

Fold in thawed Cool Whip and marshmallows. Continue gently folding the pudding mixture until everything is evenly combined. Be sure to scrape sides and bottom for even mixing.

Cover the bowl with plastic wrap and refrigerated 2 hours up to overnight. Serve after chilled.
