Tomato Avocado Spinach Salad w/ Lemon Basil Vinaigrette

Here in Oklahoma, we are in that seasonal blur between summer and fall, some days feel just like mid-July and other days whisper of change with gray overcast skies and cool breezes. Yes, it’s time for something a little different but while while summer keeps hanging on, I feel the urgency to make the most of summer’s produce. This salad is a blend of fresh summer goodness and still perfectly points to fall’s hearty, comforting, flavor-packed sides. Continue reading

4-Ingredient Frito “Salad”

I admit, there may be a liberty taken in the name of this recipe — but we’ll get to that in a minute. First, let me just say “WHEW”. Is it that time of year or what?! I honestly don’t think I have cooked a meal in 10 days, maybe even all month. Truthfully, I cannot remember the last time I made dinner. Continue reading

BLT on a stick with Homemade Buttermilk Herbed Dressing

BLT — it is my most favorite sandwich. Toasted white bread, a smear of mayo, thick cut salty bacon, crisp iceberg & a juicy slab of ripe, juicy summer tomato.  I am just not sure it can get any better. That is why I was so excited to try this idea ((found on PINTEREST)). It was the perfect addition to the wedding shower tasties I served over the weekend!

Mom’s Simple Cranberry Salad

Well, mom told me it came from Laura’s mom — but since Laura’s mom is a mom and the cranberry salad is so very simple, I will still call it “Mom’s Simple Cranberry Salad”. But what you really need to know, besides it’s simplicity and mom origins, is that is tastes REALLY good! And — I bet at least one ingredient will surprise you!

Mustard Dressed Radish & Cilantro Slaw

On this week’s menu, I made one of my busy night “go-to slow cooker recipes”: Curry Beef and Butternut Squash!! It is a meal that ((surprisingly)) pleases everyone & is so easy to make. Somehow, I managed to find a few spare seconds in the hustle of my day and decided it was time to do something with the beautiful radishes I found at Whole Foods.

Nectarines + Lemon = Sunshine Salad

Is it really nectarine season??  I thought nectarines were a summer fruit?? Our Oklahoma Spring has lasted longer than any I can remember ((YAY!!)). As a matter of fact, our Winter was crazy long too ((Yippee!!)). So, my mind just can’t comprehend that Summer is around the corner. But, my taste buds love nectarines in any season! Lime Cilantro & Jalapeño Salad ((serve with curry…if you please))

I recently invented the wheel. It was hard but somebody had to do it…Life will be so much brighter & simpler for all of humanity. Okay, as you know, I did no such thing — but even three days later, I am still beaming about the recipe I created: Thai Buttermilk Curry & Apricot Glazed Grilled Flap Steak. It came from a combination of no time & necessity. Continue reading
