Pre-cut Veggies For this recipe, I used fresh RICED Cauliflower and a pre-shredded coleslaw blend that includes 2 types of cabbage and julienned carrots. Not only did this save me time but I was also able to measure out exactly how much I wanted to use. The produce section of your grocery store will have a wide selections of pre-cut veggies.
Whole Foods at Classen Curve in OKC not only had this beautiful coleslaw mix but I also found this small chunk riced cauliflower. Other options for prepared vegetable add-ins include fresh pico de gallo, shaved Brussels sprouts, diced onions, sliced carrots, diced butternut squash and shredded Kale. Honestly – enough options to stay excited about veggie soup!
Jarred Marinara Since this recipe has so few ingredients, it’s important to select a brand with high quality, minimal ingredients. I LOVE Mezzeta Italian Plum Tomato Marinara – it’s packed with flavors of sweet + acidic tomato, basil and garlic.
Keep it Covered Keeping the lid on your soup pot while these ingredients simmer really helps to boost the flavors. The fresh cauliflower and coleslaw release their moisture, enriching the soup with vegetable flavors.

6 minute Vegetable Soup
- 1 1/2 c of each ::
- jarred marinara sauce
- coleslaw salad mix
- fresh, riced cauliflower
Combine all ingredients in a medium soup pot, stirring to combine. Adjust flame to medium, bring to a simmer and cover for 5 minutes. Stir occasionally to prevent scorching.
Season with salt and pepper if desired and serve.
Serves 1-2
NOTE – for thinner soup, add a few splashes of filtered water or chicken stock.
