Fast and Easy Cheesy Enchilada Stove-Top Pasta

Seems like “busy” and “dinnertime” have become best friends lately. We are rushed from appointments to lessons to practice to complete assignments and tweak projects. Throw in some pretty weather that keeps you outside more than in and the ever present desire to stare at a blank wall for a few moments when life starts to become too packed ((oh that’s just me?!?)) — and dinnertime with a home-cooked meal can become nearly impossible. CopyCat Old-School Iguana Lounge Salsa

In the year BB ((before babies)), I worked for an engineering firm in OKC, on the edge of Nichols Hills and had money to burn. Well, I NEVER had money to burn — but I could afford the occasional $4.99 lunch special at a string of nearby restaurants. Brown Bag’s Chicken Salad Sandwich & Pearl’s, Red Beans & Rice were among my most favorite lunches. I have shared my “copycat” version of those recipes HERE & HERE. But the one restaurant I have yet to discuss is Iguana Lounge. Continue reading

CopyCat Cheesy Chicken Enchilada Soup

This is it — the chicken enchilada soup recipe that will be your go to. Now, I am not bragging ((at all)), rather just stating the simple fact: this is the BEST enchilada soup recipe. I have a bundle of recipes just floating around in the spaces between my to do lists, daydreams and whatever decides to bounce around in my brain throughout my days. And this recipe is one that has been begging to come to be for months. Please tell me I am not the only one this happens to! Continue reading

Spicy Shrimp Tacos & Emily’s Special Sauce

If you saw my previous recipe: Summer Seafood Pasta, then you may me noticing a mini-theme. Yes, for the last 6 weeks, I have been craving seafood, especially shrimp. And — um, shrimp has become SO expensive, which is why it hasn’t been on our menu for a long time. But, Whole Foods ran a good sale, Continue reading

Simple Mexi-Bowls & the Most Delicious Recipe for Mexi-Style Shredded Beef

A sign reading: “Necessity is the mother of invention” should be hung in my kitchen for sure — it totally describes my cooking life. It goes a little something like this: “What?!? it is 2:30 already?!? … Oh gosh. What am I going to make for dinner … that doesn’t make everyone cry or throw up??!” ((thinking, thinking)) “What is in the pantry?? ((there is some stuff)) What is in the fridge?? ((some essentials for sure)) I think I will have to hit the freezer ((dread — there is hardly enough time to thaw and cook those frozen bricks of beef))…” Continue reading

Mexican Jumping Beans — ((Taco Seasoned No-Peek Bean Soup))

There are so many things I love about beans — but I think my favorite is how hearty & healthy they are. Oops, that’s two things — sorry.  I know I have shared a lot of bean recipes on Food for a Year, and this Mexican version my be my favorite. Well, it is probably a tie between this and the Cajun Red Beans & Rice.
