Spicy Oven-Roasted Cauliflower

One of my favorite ways to make & eat veg­gies is to oven-roast them! If you have nev­er tast­ed oven-roast­ed cel­ery, green onions, green beans, car­rots, mush­rooms, squash, broc­coli, cab­bage AND espe­cial­ly cau­li­flower — you have real­ly missed out on the yum­mi­est way to meet your dai­ly veg­gie quo­ta. Oven-roast­ing brings out a blast of fla­vors includ­ing an amaz­ing sweet­ness that’s most­ly hid­den in fresh, steamed & boiled prepa­ra­tions.

CopyCat Old-School Iguana Lounge Salsa

In the year BB ((before babies)), I worked for an engi­neer­ing firm in OKC, on the edge of Nichols Hills and had mon­ey to burn. Well, I NEVER had mon­ey to burn — but I could afford the occa­sion­al $4.99 lunch spe­cial at a string of near­by restau­rants. Brown Bag’s Chick­en Sal­ad Sand­wich & Pearl’s, Red Beans & Rice were among my most favorite lunch­es. I have shared my “copy­cat” ver­sion of those recipes HERE & HERE. Spicy Salsa ((really spicy))

I LOVE chips and sal­sa! It is one of my top 3 favorite foods ((next to almond cake with warm but­ter­cream icing and fried chick­en with home­made ranch))! I also love mak­ing my own sal­sa.
