What exactly is Green Goddess Dip?? If you like Ranch Dressing, you’ll love this. It’s MEGA ranch! Everything you love about Ranch PLUS a little cucumber, carrot, fennel and parsley. This twist, takes the traditional flavors of classic salad dressing called Green Goddess removes the anchovies and mayo and adds some grated carrots and cucumber.
This Green Goddess Dip (garden style veggie) version is a little thicker than a traditional salad dressing and makes use of several herbs and veggies typically grown in my summer vegetable garden.
Here’s the breakdown for this MEGA delicious dip ::
- grated carrots, cucumber and fennel are the star flavors for this quick dip
- cream cheese and sour cream are essential to the thick and creamy texture
- dijon mustard and crushed red peppers (and a pinch of salt) create a well-rounded deep flavor
One pro-tip when home-making any dip or salad dressing?? Save the lidded container (like this sour cream container). It’s the perfect container for storing leftover dip.
I love the addition of sweet carrots and cool cucumber – and the fennel and parsley provide the herbaceous flavors my tastebuds crave in a dip. Bonus?? The kids loved this too – this dip is a great snack to squeeze in some extra vegetables!
Green Goddess Dip (garden veggie style)
- 8 oz sour cream
- 8 oz cream cheese
- 2 t dijon mustard
- 1 c grated carrots
- ½ c chopped Italian parsley
- 1 (3”) piece of English cucumber
- 3 T fresh fennel frond
- 4-6 slices of fennel bulb (approximately ¼ c.)
- 1 t kosher salt
- ¼ t crushed red pepper (optional for heat)
In the bowl of a food processor, combine all ingredients, pulsing to smooth (or desired consistency). Serve immediately or chill until service. Lasts 2 weeks refrigerated. Serve with crackers, chips or veggie sticks.
Makes about 16 oz.
