Bacon + Cabbage! I am pretty sure bacon + anything = true love, but when bacon meets cabbage, sparks fly!

The smell from the oven is proof that they were “MFEO“. The addition of sweet onion, parmesan and bacon during make this a recipe you will want to hang on to. Roasting cabbage in the oven is a great way to prepare this veggie. The typical strong, peppery flavor of raw cabbage transforms into sweet & mellow deliciousness and all of the nutrients are preserved.

My favorite part of the roasted cabbage? It’s a little secret that only the cook gets to know, the dark brown and black crispy pieces. No, they aren’t a mistake of over cooking – they are intentional and heavenly, for real. Why is it a secret only the cook gets to know? Well, at least in my house, the cook ((me)) plates the food and somehow, my plate has a bit more black bits than everyone else’s, hmm.

Ingredients
  1. 1 small head of cabbage, sliced thin
  2. 1/2 medium sweet onion, sliced thin
  3. 2 slices center-cut bacon, cut into thin strips
  4. Trader Joe's Everyday Seasoning ((or a steak seasoning grinder))
  5. 1 c. Panko bread crumbs
  6. 1/4 c parmesan, shaved
  7. 2 T cooking oil
  8. sea salt to taste
Instructions
  1. Preheat oven to 400°. Line a baking sheet with parchment paper. Place veggies and bacon on the baking sheet, and give them a few tosses by hand to ensure everything is evenly combined. Season liberally with Trader Joe's or another steakhouse style grinder. Sprinkle Panko & parm evenly over the cabbage and top with a drizzle of oil.
  2. Place in the oven and bake for 40 min, tossing several times throughout the cooking process for even cooking. You will want the tips of the onions and cabbage to blacken and the bacon and Panko to crisp -- as the cooking time comes keep an eye on it to make sure.
  3. Remove from oven, season with sea salt to taste & serve.
