Tomato Avocado Spinach Salad w/ Lemon Basil Vinaigrette

Here in Oklahoma, we are in that seasonal blur between summer and fall, some days feel just like mid-July and other days whisper of change with gray overcast skies and cool breezes. Yes, it’s time for something a little different but while while summer keeps hanging on, I feel the urgency to make the most of summer’s produce. This salad is a blend of fresh summer goodness and still perfectly points to fall’s hearty, comforting, flavor-packed sides. Continue reading

Spicy Oven-Roasted Cauliflower

One of my favorite ways to make & eat veggies is to oven-roast them! If you have never tasted oven-roasted celery, green onions, green beans, carrots, mushrooms, squash, broccoli, cabbage AND especially cauliflower — you have really missed out on the yummiest way to meet your daily veggie quota. Oven-roasting brings out a blast of flavors including an amazing sweetness that’s mostly hidden in fresh, steamed & boiled preparations.

It has been a while since I have shared a really good side dish — and this is a really good one! Mom’s Simple Cranberry Salad

Well, mom told me it came from Laura’s mom — but since Laura’s mom is a mom and the cranberry salad is so very simple, I will still call it “Mom’s Simple Cranberry Salad”. But what you really need to know, besides it’s simplicity and mom origins, is that is tastes REALLY good! And — I bet at least one ingredient will surprise you!

Mustard Dressed Radish & Cilantro Slaw

On this week’s menu, I made one of my busy night “go-to slow cooker recipes”: Curry Beef and Butternut Squash!! It is a meal that ((surprisingly)) pleases everyone & is so easy to make. Somehow, I managed to find a few spare seconds in the hustle of my day and decided it was time to do something with the beautiful radishes I found at Whole Foods.
