Cham­pagne and New Year’s Eve seem to go hand in hand — so why not take that tra­di­tion and turn it into a yum­my dessert?! I have made cheese­cake over a dozen times in the last year. I made a Vanil­la Bean Cheese­cake with a Sweet­ened Sour Cream Top­ping, anoth­er with a Sour Cher­ry Top­ping & a Birth­day Cake Cheese­cake just to name a few!

This cheese­cake is the most per­fect, rich, creamy cheese­cake. The crunch of the but­tery short­bread crust pairs per­fect­ly with the sub­tle fruity cham­pagne whis­pers.
