Cheesy Bacon Meatball Potato Casserole ((a real crowd pleaser))

There comes a point when it is time for a change — right?? Well, I need­ed some­thing dif­fer­ent for din­ner. I did a quick scan of my freez­er, fridge and pantry and this is what I cre­at­ed: “Meat­ball Casse­role”.

Super Cheesy Double Meat Baked Spaghetti

With the first bite of this baked spaghet­ti, I thought to myself “why has it been so long since I made this for din­ner??”. I quick­ly answered my ques­tion — which, as I look back on this con­vo– makes me real­ize: not only am I talk­ing to myself; I am admit­ting it pub­licly. Is that a good pic­ture of a mom’s life or what?!

So — here is my answer: “Wow, this is so good, I can’t quit eat­ing it. Now I remem­ber why it’s been off the menu for so long!! It makes my pants tight!”.

Homemade Green Enchilada Sauce & Cream Cheese Chicken Enchilada Casserole ((It’s a “Two-fer”))

Oh boy! After a week of meals come Fri­day night, I am ready to call the piz­za deliv­ery man! But I forced myself to pull out one more meal. ((Who am I kid­ding, there is a meal com­ing for Sat­ur­day too!)) I sure am glad I per­se­vered! This one was a total win­ner. The entire herd larped it up — there was even an elbow jab or two for the last crispy bits.

Crunchy Salsa Chicken Bake

If you are fol­low­ing me on Insta­gram or Face­book then you already know about this recipe. It has been a busy week, not unlike all of my weeks late­ly! But when I made this casse­role yes­ter­day, I had to do some­thing I haven’t had to do in a long time. I start­ed think­ing about what I need­ed to do for din­ner at 6 am.
