Weekend Randomness and a Yummy Leftover Recipe

It is “that” time of year! Pumpkins are everywhere and the air is cooling! I took the herd to the grocery store a few days ago. For the record, that is something I try to avoid. Within 2 minutes, my cart was full:

The gourds and pumpkins were irresistibly gorgeous! Pumpkin carving plans were made – but I insisted on waiting for David to get home from work. Oh and I also “insisted” on the pumpkin carving festivities to occur in the backyard…in the dark. No pumpkin gut & goo in this gal’s kitchen.

Based on the pumpkin melee that occurred, I am anticipating a grand pumpkin harvest next spring…seeds were strewn far and near. ((Better outside than in…do I know my herd or what??))

I went to the dentist last week for my 6 month cleaning. Cavities ((plural)) were found. I bet you can’t guess how many. I wish I couldn’t guess. In an unrelated note, did you know there are prescription toothpastes?? I wish I didn’t know about that either. Oh and one last random thought: we HAD a trip planned for spring break – I had the cool idea to sit in a dental chair for several hours instead.

The boys went to the OU/TX game this weekend for Kade’s birthday. He is getting so big – against my will.

My dad (in the middle), aunt and their cousin went to the OU/TX game 50 years ago this weekend.

We pulled out my vintage Super Nintendo. Super Mario Bros is the bomb diggity – the guys love it. We have already beat the whole thing once and have now started over. I am proud to say, I am a master at playing SMB on the Super Nintendo. Finally, something I do impresses the boys.

A couple of days ago, I made this Citrus-Apricot Jerk Pork Roast in my slow cooker. I started it 3 hours too late. Surprisingly, dinner was not ready on time. I had to make two meals that night – boo. The boys were thrilled to eat their most favorite meal I make: bulk frozen store bought meatballs, jarred pasta sauce and angel hair pasta. Mom said: “Emily, you have to remember, you are feeding a pack of dogs – don’t take it personally.” I felt strangely better after that.

Consequently, I have 4  pounds of the most delicious slow cooked jerk pork “leftover”. Tonight, while the boys were heading back from the game, I made myself the MOST unexpectedly perfect quesadilla ever!

It was simple and awesome: Amish fresh yogurt farm cheese, jerk pork & my own sour cream Dijon sauce. SO.GOOD.  I ate dinner after Gracie ((who had her favorite meal – grilled cheese)) & she asked for a bite. “MMM, mom! This is so good – it tastes different but is so good, can I have two pieces?” She likes my food (yay)!

Citrus Jerk Pork Quesadillas with Sour Cream Dijon
Sweet and spicy perfection pilled into a crisp quesadilla filled with gooey fresh Amish cheese and my own creamy dijon.

Ingredients
  1. 1/4 c shredded citrus jerk pork ((recipe link in body of this post))
  2. 1 flour tortilla
  3. 3-4 thin slices of Amish fresh yogurt cheese
  4. 1-2 T sour cream dijon
Sour Cream Dijon
  1. 1/2 c sour cream
  2. 3 T dijon (I LOVE Sir Kensington's)
  3. 1/2 t raw sugar
  4. sea salt and pepper to taste
Instructions
  1. Prepare tortilla over medium heat. Layer meat and cheese, dollop with sour cream dijon. Fold, cut into pieces and serve.
Dijon
  1. Mix all ingredients and store covered in fridge until ready to use. Lasts up to one week.
