Fast and Easy Cheesy Enchilada Stove-Top Pasta

Fast and Easy Cheesy Enchilada Stove-Top Pasta

Seems like “busy” and “dinnertime” have become best friends lately. We are rushed from appointments to lessons to practice to complete assignments and tweak projects. Throw in some pretty weather that keeps you outside more than in and the ever present desire to stare at a blank wall for a few moments when life starts to become too packed ((oh that’s just me?!?)) – and dinnertime with a home-cooked meal can become nearly impossible. Continue reading Fast and Easy Cheesy Enchilada Stove-Top Pasta

Rustic Blueberry Biscuits – a busy morning breakfast solution!

Rustic Blueberry Biscuits – a busy morning breakfast solution!

This simple recipe is a perfect solution for the busy morning breakfast – really. These biscuits take less than 5 minutes to mix and only 13 minutes to bake. If you measure everything out the night before, even with taking the extra step to work in the shortening these biscuits could be in your mouth before you actually wake up. Well, maybe not quite that quick. Continue reading Rustic Blueberry Biscuits – a busy morning breakfast solution!

Fresh Washington Apple Crisp w/ Cinnamon Streusel Biscuit Crust

Fresh Washington Apple Crisp w/ Cinnamon Streusel Biscuit Crust

While in Washington, it didn’t take me long to notice we arrived right in the middle of apple season. At almost every turn, I saw apple trees with branches bowing at the weight of large, brightly colored apples. I had to force myself not to pull…

S’mores Scones

S’mores Scones

I will admit, chopping chocolate bars, quartering jumbo marshmallows and crushing graham crackers are not on the list of breakfast-making activities I ever imagined I would be checking off at 8 o’clock in the morning. But, with that first sticky, gooey, chocolatey bite – s’mores…

Top Hikes & Eats On ((or near)) Orcas

Top Hikes & Eats On ((or near)) Orcas

After 3 trips to the San Juan Islands over the last 4 years ((read about are trip 2 years ago HERE)), I definitely feel as though that place is a second home. The first time we went, Gracie was only 2 – so our experiences were limited. The second time we went, Shep and I never left the house until he was medi-flighted off of the island. So this time, we ventured out! We took new hikes, went to other parts of the island, tried a few restaurants and a bakery and even took the inter-island ferry to Friday Harbor three times.

With all the sights and tasty food we enjoyed this year, I decided to share some of my favorites. ((BUT, I really like the slower pace and small population of Orcas — so don’t visit. Just kidding, kind of.)) Continue reading Top Hikes & Eats On ((or near)) Orcas

Pacific Northwest Blueberry Brownies

Pacific Northwest Blueberry Brownies

On the way to the Anacortes Ferry there is the most delightful outdoor market. I first discovered this market on our trip to Orcas Island 2 years ago. On that trip, I loaded up on fresh, sweet corn, herb bundles as big as my head, tomatoes, carrots, several types of fruit and two flats of blueberries. The blueberries were my most treasured purchase – one taste and my entire perception of that little blue fruit was forever changed. Unfortunately, blueberries ended up being the only item I cooked with while on that trip. Continue reading Pacific Northwest Blueberry Brownies
